Another good piece has just been posted at BP. Ginny Searle's Guide to Every Team, Player and Mutual Option for the 2019 Offseason.
An example:
Cleveland Indians
Corey Kluber, 2020 club option for $17.5 million ($1 million buyout): Accept
After injuries limited Kluber to just 35 ⅔ innings in which he looked nothing like his usual, efficient self, there were questions about whether spendthrift Cleveland might decline an option that swelled substantially after the righty placed in the top 5 of last year’s Cy Young vote. Thankfully, they cleared up any mystery early in October, announcing they were keeping Kluber. At the same time, they announced the fates of the following two players.
Jason Kipnis, 2020 club option for $16.5 million ($2.5 million buyout): Decline
Dan Otero, 2020 club option for $1.5 million ($100,000 buyout): Decline

Ended the game in the 10th inning last night on the second pitch he saw from Wily Peralta. In the last two weeks Kipnis has slashed .372/.438/.721.
